In a medium bowl, combine 2 tablespoons of lemon juice, 2 tablespoons of canola oil, 1/8 teaspoon of coarsely ground black pepper, 6 diced fresh apricots, ½ cup of diced red onion, and 1/3 cup of diced red bell pepper. Then break out the tortilla chips and dunk, dip, and munch!
