A Carrot Cocktail... To Boost Immunity?

If your schedule is tight, then you don’t have time to be down and out with a cold or flu. Fortunately, vitamin C and beta-carotene-rich foods (like apricots, cantaloupes, peaches, and carrots) can fortify your defenses against invading germs. And, as luck would have it, those fabulous foods make sensational shakes and smoothies! So sip on this “neon” immune-system booster to keep your body in the pink of good health:

In a blender, combine 1 cup of ruby red grapefruit juice and 1/8 teaspoon of ground ginger. Begin to blend on high, remove the feeder cap, and drop in a cup of baby carrots, one carrot at a time. Continue to blend until all of the carrots are pureed, then drop in a cup of ice cubes, one cube at a time, and blend until the ice is finely crushed. Pour the smoothie into two chilled glasses, and make a toast to good health.
