Sweet Spud Superstars!
Thanksgiving dinner just wouldn’t be the same without the warm, melt-in-your-mouth
taste of sweet potatoes. Besides having remarkable flavor, sweet potatoes are packed
with beta-carotene, a powerful antioxidant that may help reduce the risk of cancer,
heart disease, and other heavyweight health problems. So give thanks to the sweet
potato on Thanksgiving—and every other Thursday of the year!
These healthy sweet potato fries will make you forget about your craving for those
greasy fast-food French fries. Here’s how to whip up a batch:
Preheat the oven to 425°F. Spray two baking sheets with canola oil cooking spray.
Cut 4 scrubbed, unpeeled sweet potatoes in half, then slice each half into several
long wedges. Place the wedges on the baking sheets, mist them with additional cooking
spray, and sprinkle them with 1 teaspoon of ground cinnamon, ½ teaspoon of ground
nutmeg, ½ teaspoon of ground black pepper, and ¼ teaspoon of kosher salt. Bake the
fries for 20 minutes, then turn them and cook for an additional 10 to 20 minutes,
or until they’re brown and crispy on the outside, and soft in the middle.
